Cheesy Scalloped Potatoes
Easter tradition calls for using creativity and imagination to dye eggs for the Easter egg hunt, and a lot of help from the young ones! The time spent is usually filled with warmth and is not complete without the list of spring holiday-inspired traditional Easter favourites.
Bread is almost always synonymous to Easter as eggs are, and virtually every country has a bread unique to this special day. From hot cross buns to braided and filled breads, these aromatic yummy treats are a perfect complement to the festive table. Other traditional Easter favourites include leg of lamb, asparagus, casseroles, and scalloped potatoes.
Going with the Easter-inspired theme, this is a simple yet delicious potato side-dish to accompany meats and is easily prepared for gatherings.
Cheesy Scalloped Potatoes
Preparation time: 10 minutes
Cooking time: 1 hour
Servings: 4
Ingredients
• 600 g potatoes, peeled and thinly sliced
• 1 can (290g) condensed cream of mushroom soup, undiluted
• 90 g shredded Cheddar cheese, divided in two parts
• dash of freshly ground black pepper
Methods
1) In a large bowl, combine potatoes, soup and pepper.
2) Layer half of the mixture in a greased 13-in. x 9-in. x 2-in. baking dish.
3) Sprinkle with half of the cheese. Repeat layers.
4) Bake uncovered, at 175 degrees C for about an hour or until the potatoes are tender and the top bubbly and golden brown. Serve warm.
Variations
1) Substitute the cream of mushroom with cream of chicken
2) Add thinly sliced onions to the layers or chopped garlic for that piquant taste
3) For a richer dish, dot each layer with 10g of butter
4) Substitute black pepper with Cayenne powder
Simple variations like the ones suggested above not only add variety but also gives you ideas for creativity. And the great thing is, you don’t have to wait for Easter to repeat the dish!
